Chef Richard Ekkebus invites diners on a culinary adventure alongside the premiere of the legendary Champagne
After 15 years of maturation, Dom Pérignon has elevated Vintage 2004 to a new summit of expression with Plénitude 2. The latest bottling has transformed, unfurling across every dimension for a wider, deeper, longer, and more intense Champagne.
Inspired by the prestige cuvée, chef Richard Ekkebus, the hotel’s director of culinary operations and F&B, has given four dishes a ‘second life’ with the Plénitude 2 in mind, reaching a new level of harmony that is anchored in Amber's contemporary and sustainable approach.
The dishes include the aka uni, which was first created in 2016 and reinvented when Amber reopened with a progressive vision in 2019 without butter, milk and cream. Together with three other signatures: kuro awabi black lip abalone (created in 2017; revived in 2022); Ping Yuen cockerel with white Alba truffles (created in 2009; revived in 2022); and the conspiracy dak lak 90% bitter chocolate (created in 2017; revived in 2022), guests can savour a “second life” with Amber and Dom Pérignon.
The exclusive four-course pairing menu is available from October 1 to 31 and priced at HK$4,798 per person with a pairing flute of Dom Pérignon Vintage 2004 - Plénitude 2 for limited seats.
