From Alain Ducasse at Morpheus to Chinese favourites Ying, Pearl Dragon and Jade Dragon, the restaurants at Macau’s Melco Resorts retain their seven stars

The Michelin Guide Hong Kong & Macau 2023 was unveiled at the Grand Lisboa Macau on April 26, recognising restaurants throughout the region for their creativity, skill and excellence. Melco proudly received seven Michelin stars across four restaurants in its Macau-based portfolio, as well as one Michelin Selected Restaurant, Yi and one Bib Gourmand, Din Tai Fung.

Awarding restaurants up to three stars, Michelin judges on five criteria: quality of ingredients, mastery of flavour and cooking techniques, personality of the chef, value for money and consistency. It comes as no surprise that Jade Dragon, the City of Dreams’ most prestigious Cantonese restaurant, has picked up three stars for the fifth consecutive year.

With executive chef Kelvin Au Yeung leading the team, Jade Dragon sets the benchmark for innovative Cantonese cuisine, celebrating authentic traditions while showcasing modern techniques. Speciality dishes include lychee wood-barbecued meat, from roasted goose to crispy suckling pig with caviar to Ibérico pork collar, and a range of healing seasonal double-boiled soups.

Also racking up the plaudits is Alain Ducasse at Morpheus, whose French cuisine has been awarded two Michelin stars for five years, as well as countless other titles, such as its five-star rating in the Forbes Travel Guide from 2020 to 2023. Joining in the celebrations himself, Ducasse personally visited the restaurant to congratulate and give appreciation to the chefs and team behind it.

The restaurant’s philosophy places a huge emphasis on presenting authentic French flavours through produce that has been harvested during its optimal season. The menu features more than 1,200 fine wines sourced from French vineyards, alongside signature dishes from his other restaurants in Monaco, Paris and London.

Ying and Pearl Dragon, both specialising in Cantonese cuisine, also keep their Michelin stars. Ying, at Altira, perfectly balances 100-year-old traditions with exciting contemporary interpretations of dishes. And Studio City’s gastronomic journey at Pearl Dragon transports its guests through the refined provincial flavours of China.

Melco has an array of industry leaders that are setting the pace for fine dining. It's Michelin Selected Restaurant Yi and Bib Gourmand awarded and Din Tai Fung completes this year’s prestigious line-up.
