Spanish cuisine is the mainstay of FOC (‘fire’ in the Spanish Catalan dialect) Sentosa. Presented on a wooden platter is the pa de fetge; the home-made Catalan pork pâté is smooth yet firm and accompanied by Melba toast and mixed pickles. A a worthy starter. Paella, originally from Valencia and a speciality of FOC Sentosa, is served in the large, flat-bottomed pan in which the paella was cooked. The serving is good for two. The fragrant rice grains retain their porosity, with the impressively burnt bottom layer adding to the desired ‘fire’ taste. For a sweet ending, consider crema Catalana with its topping of caramelised sugar, or creamy Basque cheesecake. Located at Palawan Beach, the restaurant provides a pleasant, relaxed, seaside dining complete with picnic tables. It also has a swimming pool with the deck fronting a separate bar area. The wine list includes creative cocktails and chilled Spanish sangria with its red wine base, fruit and spirits.
