The menu reads like a catalogue of dishes every Hongkonger already, or at least should, know: char siu, baked rice and restorative broths, but each arrives with a level of ingredient sourcing and quiet discipline that shifts them into a different register. Take the Miyazaki happy pork char siu, where the prized Japanese pork lends a deeper sweetness and marbling than the usual cut, the glaze balanced so the meat—not the sugar—does the talking. Baked pork chop rice with cherry tomatoes nods to the beloved cha chaan teng staple, yet here the sauce is brighter, the rice properly toasted at the edges. Then there is shredded chicken and termite mushroom rice in superior chicken broth, a bowl that reads almost modestly on the menu but unfolds with remarkable depth once the spoon hits the broth. Flower Drum’s appeal lies in this gentle subversion. Nothing feels flashy, yet everything tastes more considered than expected.
