Dining at Feuille feels almost like moving through the seasons, course by course. The kitchen’s approach is meticulous yet quietly imaginative, building dishes around herbs, grains and leaves while weaving in carefully chosen seafood or game to deepen the flavour story. Rather than overwhelming the palate, the menu favours subtle contrasts and thoughtful layering. The juniper and mussel “éclade” opens with a smoky, maritime note, recalling the French coastal technique that inspired it. The Shiqi pigeon with plum and mugwort offers something richer, earthy and slightly wild, lifted by the brightness of fruit and herb. Then comes mustard seed with shiso and sea grape, a dish that captures Feuille’s philosophy in miniature: fresh, vibrant and texturally playful. Throughout the meal, the cooking feels attentive to nature’s rhythms, with elegant plating and pairings that reinforce the sense of seasonality.
