For those who have followed chef-owner Chong Yu Cheng since his Ipoh days, Esca can be seen as Above Gastrobar’s spiritual successor. This year, look forward to a new direction as Chong turns away from Western frameworks around dining, looking further within to present plates that feel more expressive and instinctive, without the weight of pretense or formality.
