The name "Eika" originates from the name of the elementary school that Chef Hieda Ryohei attended on his home island of Iki, Japan: "Eika Elementary School." The name is also taken from a line in the "Mencius: Li Lou Xia" verse: "The spring flows from its source, day and night, flowing through the Eika River, spreading to the four seas."

 

"EIKA" means spring water gushing out from its source, flowing day and night, filling the low pits and continuing to flow forward until it reaches the sea. Achievement requires gradual accumulation, down-to-earth and gradual progress. Having honed his skills at each stage, Chef Hieda remains committed to this spirit to this day.

The omakase menu at Eika features 12 to 14 courses crafted by Chef Hieda, showcasing seasonal ingredients through refined Japanese techniques. Each floor has been personally designed by the chef, offering guests a unique ambience at every level.
