Helmed by acclaimed chef David Toutain alongside Chef de Cuisine Valentin Fouache, the kitchen explores the profound duality of land and sea through a vegetable-forward, sustainable lens. Traceable, seasonal ingredients are elevated using precise techniques, achieving bold and harmonious flavour profiles. The eight-course tasting menu is further enriched by provenance cards detailing the origin of each element. The dining room elegantly mirrors this organic philosophy, accented by soothing botanical sage hues and flower-pressed menus.
