The spring edition of Salon Lanson’s Hong Kong Odyssey cocktail series captures the essence of the season while reinterpreting the storied streets of its surroundings

Following a successful debut, Salon Lanson is launching the spring edition of its Hong Kong Odyssey cocktail series, featuring a curation of nine bespoke cocktails. Each drink is meticulously crafted to capture the essence of the season while echoing the storied streets of Causeway Bay.

Curated by head mixologist Manuel Saavedra, the series is presented as a walking map and celebrates the neighbourhood through a narrative-led menu designed to offer respite from the area’s bustle. Spring’s focus shifts towards light, clean and delicate notes of shochu, allowing the natural flavours of seasonal ingredients to shine. Each shochu-based creation incorporates elements that embody the subtle essence of spring, making them an ideal choice for a relaxed cocktail hour tipple or as an aperitif.

To complement the cocktails, three canapé menus are served on rotation, each featuring six pieces of savoury and sweet items. Highlights across the menus include champagne-compressed watermelon with foie gras mousse, honey-glazed pork jowl with lime and lemongrass, poached red prawn tartare with Kristal caviar, beef bourguignon tart and pistachio baklava.

The Lanson Thaw is a refined take on the classic clarified milk punch. A base of shochu, lychee green tea and honey is elevated with the tropical sweetness of guava and herbal notes of perilla to offer a refreshing cocktail that sits quietly on the palate.

The Incense & Tide draws inspiration from the incense coils of the nearby Tin Hau Temple with a Negroni-style creation. Lapsang Souchong tea-infused Campari and sweet vermouth are paired with dried kumquat-infused shochu for a unique, citrusy kick. The drink is served with a burning stick of incense that adds fragrance to your tasting journey. 

Harmony Bloom celebrates the brighter notes of spring with a refreshing take on the classic sour. Saavedra nods to the nearby Po Leung Kuk with a harmonious blend of strawberry, white bean vinegar, elderflower syrup and shochu, honouring the institute’s enduring commitment and contribution to social accord. 

The Pink Market Fizz takes inspiration from the revitalised Central Market, whose founding address was closer to modern-day Causeway Bay than Central. A playful hybrid of a highball and seasonal spritz, this drink blends the fruitiness of lychee and raspberry with the clarity of a shochu base, finished with chilled Prosecco. 

The Twin Star Punch reimagines the classic Pisco Punch, which swaps traditional spirits for shochu as a base. A nod to the iconic Star Ferry, starfruit takes centre stage, offering a crisp sweetness that shines through a blend of Fuji apple juice and apricot liqueur. 

Happy Valley and its racing history receives representation in the Jockey’s Weight, a Martini-style serve crafted through a lengthy and intricate cold infusion that mirrors the precise measurement of a jockey’s weight, which determines eligibility and performance. The result is a clear drink with a vibrant citrus and herb profile, finished with a drop of homemade blanched basil oil. 

Salon Lanson’s new cocktail and canapés menus are available from 5.30pm to 7.30pm daily, cocktails are priced from HK$128 each.
