Three nights at Le Cristal Parisian, a Grand Vintage that shares the resort's birth year and 1,500 drones over the Macau skyline. Tatler joined The Parisian Macao and Moët & Chandon for a decade worth toasting

Ten years ago, a slice of Paris opened on the Cotai Strip. In the same year, a very good harvest began its slow journey through the cellars of Moët & Chandon. Across September 11, 12 and 13 the two came together at The Parisian Macao for a three-night gala marking the resort's 10th anniversary and the release of Grand Vintage 2016.

The Parisian Macao has spent a decade perfecting its own idea of France. Its half-scale Eiffel Tower is one of Macau's most recognisable sights, and the resort now spans more than 2,500 rooms and suites, a 300,000-square-foot Shoppes at Parisian, a 1,200-seat theatre and a streetscape of mime artists and buskers. For the anniversary, it chose a partner with a similar sense of occasion. Moët & Chandon, founded in 1743 and now present in over 150 countries, has built its reputation on marking moments worth remembering.

The setting was Le Cristal Parisian, where tables faced the Eiffel Tower and the night sky beyond.

The pairing worked because the story was real. The Parisian Macao opened in 2016, the same year that produced Grand Vintage 2016. While the resort grew into a Macau landmark, the wine matured in Moët & Chandon's cellars. Poured as the anniversary cuvée, it was the emotional centre of the evening. Grand Vintage is made only in years the Cellar Master judges exceptional, and each release is a personal reading of that year. Around it sat Brut Impérial Magnum, Rosé Impérial and the rare Collection Impériale Création N°1.

Moët & Chandon executive chef Jean-Michel Bardet devised the five-course menu, built on the Maison's belief that champagne and food should bring out each other's texture, freshness and salinity. 

As dinner drew to a close, 1,500 drones rose above The Parisian Macao's skyline in an anniversary show, and the room raised a glass to a decade of memories.
