While a toast to welcome the New Year is best with bubbly, we thought a spotlight on a few uniquely deserving options would be appreciated.

Charles Doyard La Libertine

This sweet champagne, which sommelier Mason Ng recommends you end the night with, is a blend of chardonnay from four vintages, and cellar-aged for 12 years. It’s the product of a 10 year research project to produce a wine with the same gustative characteristics as the first sparkling wines produced in the 18th century. The result is a beautifully balanced showing of sweetness and acidity—with a refreshing ending.

Available exclusively at Atlas.

Dom Pérignon Vintage 2009

Dom Pérignon has done it again; chef de cave Richard Geoffrey has come up with another marvelous vintage featuring its winning, harmonious blend of pinot noir and chardonnay, borne out of excellent weather conditions in 2009. It’s bright with a flavour profile showing mature fruits and a slight acidic edge. And, honestly, there is no better reason to savour the house's latest release than a celebratory toast to the New Year.

Available at select wine shops.

This champagne's beautiful packaging is a bonus. But what we really love about this vintage fizz—made with 58 per cent pinot noir and 42 per cent chardonnay—is its nuanced flavour profile, a combination of ripe and acidic fruits, with a velvety, silky texture.

Available online and at select wine shops.

Bollinger Champagne Special Cuvée

What makes this special is its use of harvest grapes and reserve wines, which were aged for five to 15 years in magnums. The final product features a blend of 60 per cent pinot noir, 25 per cent chardonnay and 15 per cent meunier. The aroma is enticing, but it's the round, fruity notes with a touch of spice that will capture your palate.

Available online and at select wine shops.
