Harlan Goldstein showcases classic white truffle dishes with a contemporary twist

Chef Harlan Goldstein pays his annual tribute to the prized white truffle at Gold, this year with an eight-course menu each featuring the famed fungi from Piedmont, Italy. Classic dishes are revised with a contemporary touches, such as the beef tartare with burrata cheese that’s laced with a truffle dressing. 

Another specialty is the beef carpaccio with Taleggio cheese on spring onion flatbread; another must-try is the traditional Alba-style white truffle pasta incorporated with butter and Parmigiano or the classic scrambled eggs with chives and truffles.
