Chefs around the island are taking advantage of autumn’s best bounty with the introduction of new menus. Head out and indulge in all that the season has to offer, starting with Hortus’ latest afternoon tea spread.
 
Then, for flavours of Japan, dig into Shinsora’s new lunch menu featuring seasonal Japanese produce. Alternatively, take a trip to Nobu on September 28 or 29 for its exclusive eight-course menu and be served by chef-owner Nobu Matsuhisa himself. But, if you prefer flavours even closer to home, Yì by Jereme Leung’s revitalised menu puts the spotlight on traditional Chinese fare with a modern twist. End the week on a sweet note with delectable creations from Halal bakery, Gamo.

Enjoy contemporary Chinese flavours with Yì by Jereme Leung’s latest a la carte menu, conceptualised by masterchef Jereme Leung and executive Chinese chef Yap Poh Weng. Start the meal with the savoury and tangy pan-fried cuttlefish cake on quinoa with spicy tangy salsa, before digging into delectable mains. A range of new dishes are available, including Iberico pork slow cooked for 10 hours until fork-tender. It’s wrapped in a layer of seaweed before it’s fried until crispy. Delight in a lavish afternoon tea spread while admiring the stunning view of the Flower Dome gardens at Hortus. Located within the gardens itself, this Mediterranean restaurant’s latest afternoon tea spread offers bite-sized gems that celebrate the season’s best produce. Start with the savouries like the Madras curry egg finger sandwiches layered with smoked piquillo peppers and cream cheese; corn custard tart topped with trout roe; and Moroccan-inspired beef and lamb en croute in a blanket of buttery pastry. Then, indulge in sweet creations such as the chocolate hazelnut mousse; zesty lemon tart; and choux puffs generously filled with a light passionfruit mango crème diplomat. Book here.

Nobu

Celebrity chef and restaurateur Nobu Matsuhisa is coming to town and will be serving up a curated eight-course omakase dinner menu prepared by Matsuhisa himself. Head down and indulge in Japanese-Peruvian fare such as the grilled squid with fresh kohlrabi salad; Japanese Miyazaki Wagyu A5 drizzled with an umami-filled teriyaki balsamic sauce; and Matsuhisa’s selection of premium sushi. Chef-owner Sky Tai Koon Siang has introduced new lunch menus that put the spotlight on seasonal ingredients. If you have some extra downtime during lunch, opt for the 15-piece set. While the menu changes regularly, diners can expect mouth-watering cuts like the firm and mildly sweet matsukawagarei (barfin flounder), torched nodoguro (blackthroat seaperch), and hasu imo (yam stem) crowned with earthy Kaluga hybrid caviar. Still feeling peckish after the meal? Top up your meal with additional handrolls such as negitoro (raw tuna scrape), creamy uni, and aburi otoro (seared tuna). Book here.

Gamo

The latest addition to Bras Basah Complex is Gamo, a Halal Japanese-influenced bakery whipping up tantalising pastries and cakes. Pastry chef Shah Sarifi helms the kitchen and offers aromatic bakes such as the strawberry guava mochi tart and matcha yuzu lychee. The former is sweet creation comprising a buttery tart layered with strawberry guava curd, strawberry caramel and homemade milk mochi. The latter offers light Japanese flavours and sees fluffy matcha sponge cake topped with zesty yuzu curd. It’s finished with a rich matcha mousse. Savoury treats are available, too, such as the kani crab mentai croissant, a buttery and flaky croissant stuffed with smoky kani and topped with umami-filled mentaiko sauce.
