1. BBR by Alain Ducasse

Our much-awaited restaurant by revered French chef Alain Ducasse has finally opened at Raffles Hotel Singapore. The open kitchen is headed by young talented chef Louis Pacquelin, who was specially picked by Ducasse to dish out a bevvy of sublime Mediterranean delights.

There’s much to try, including pulpo a la gallega, tender-grilled octopus dressed with piquant paprika and olive oil; and langosta a la menorquina, fresh lobster chunks tossed with tomatoes, sweet bell pepper and fennel in a toothsome lobster bisque.

2. Bread Street Kitchen

Those in need of a sugar rush should take advantage of executive chef Sabrina Stillhart’s ‘Summer in the City’ dessert menu, available until September 30. Enjoy toothsome, towering sundaes with delightful flavours like sticky toffee and banana split; the latter contains layers of cornflake ice cream, banana split ice cream, sticky toffee pudding and a generous drizzle of caramel toffee sauce.

These are quite heavy on the palate, so if you’re looking for lighter options, go for the apple-crumble chantilly sundae, an ensemble of vanilla yoghurt ice cream dotted with candied pecan nuts and fragrant apple-lemon thyme stew.

4. Summer Palace

Retaining the restaurant’s one Michelin star for the third year running is such a triumphant moment for the team, that executive chef Liu Ching Hai created a five-course lunch and dinner celebratory menu dubbed New Chapter.

Each dish represents certain milestones in his career, like the appetiser of wok-fried roast pork that serves as a tribute to his mentor, Masterchef Fok Wing Tin, formerly of TungLok Group and Empress Room at Raffles Hotel Singapore.

His double-boiled assorted seafood soup served in a golden pumpkin was inspired by the simple dish he came up with to encourage his sons to eat healthier, while the oven-baked codfish with caviar and egg white was created after he was exposed to new cuisines at Shang Palace in Kuala Lumpur.

He ties the menu nicely with the double-boiled hasma with almond cream served in young coconut—his wife’s favourite dessert.

5. V Dining

Fresh from receiving one Michelin star for Rhubarb Le Restaurant, chef-partner Paul Longworth is gearing up for a guest stint at V Dining on September 24, where he’ll prepare a five-course dinner menu alongside head chef Lee Jing Peng.

Longworth will whip up delicately pan-seared scallops decorated with rhubarb and caviar; and Japanese whelk on a bed of Jerusalem artichoke and popcorn velouté. Lee will complete the meal with his halibut bouillabaisse, layered with zesty undertones from the pickles, and a scrumptious mille-feuille with cherries and Gluhwein (mulled wine).
