1. BBR by Alain Ducasse
Our much-awaited restaurant by revered French chef Alain Ducasse has finally opened at Raffles Hotel Singapore. The open kitchen is headed by young talented chef Louis Pacquelin, who was specially picked by Ducasse to dish out a bevvy of sublime Mediterranean delights.
There’s much to try, including pulpo a la gallega, tender-grilled octopus dressed with piquant paprika and olive oil; and langosta a la menorquina, fresh lobster chunks tossed with tomatoes, sweet bell pepper and fennel in a toothsome lobster bisque.
