Take advantage of the long Easter weekend with delectable brunch promotions from Burger & Lobster and Level33. The former has prepared a spread featuring its signature burger & lobster as well as egg-centric dishes, while the latter has created a lamb dish marinated in a house-brewed stout mixed with aromatics.

1. Burger & Lobster

A different but no less delicious Easter brunch awaits at Burger & Lobster, where chef Jodin Choo has prepared seafood signatures such as burger & lobster alongside egg-centric creations. Start with a mix of both and order the Lobster Royale, which is essentially an egg custard enriched with lobster and truffle puree.

Follow it up with the B&L Breakfast Taco, comprising avocado guacamole, Pico de Gallo (salsa), lobster and scrambled eggs that are served in corn taco shells and garnished with coriander and a squeeze of lime juice. And for that sweet finale to close your appetite, the Belgian waffles come with a scoop of strawberry shortcake ice cream.

Make a toast to Easter with a wide selection of cocktails, including Mimosa (with a choice of orange or grapefruit); Nespresso Martini which blends Old Young’s pure Vodka with cold drip coffee Vodka and a shot of Nespresso; and Virgin Mary, made with Alain Milliat's red tomato juice, special spice mix and olive. 2. Level33

Lamb is most often the protein of choice come Easter, which is why executive chef ArChan Chan is offering the Lamb Banjo lunch promotion on April 3 and 4. To create the delectable dish, Chan uses sustainably produced lamb from Australia, which she marinates in a house-brewed stout, light soya sauce and aromatics of star anise, cumin, cloves and rosemary. The marinade is then used as the braising liquid for the lamb, which is slow-cooked overnight to render the meaty extremely juicy and fork-tender. It’s quickly steam baked to give it a light caramelisation before it’s served with a bounty of sides including rocket leaves dressed with lemon juice’ grilled French beans, and roast potatoes and carrots. 3. Dolce Vita

We may not be able to travel anywhere, but chef de cuisine Giorgio Maggioni brings Italy to you with his fresh repertoire of Italian dishes made with the season’s best. The abundance of asparagus in spring has inspired him to create Asparagi, where the vegetable is blanched and marinated with orange to give it a zesty kick.

It’s enough to whet the appetite for the pasta dishes to come; the highlight of which is the Spaghetti Chittara, tossed with a homemade luganega ragout and accented with herbs and tomato coulis to lighten the meaty flavours. Make space for the main courses too, but choose something light like the Ricciola. It’s essentially a dish of amberjack that’s marinated in olive oil, citrus and herbs, then bathed in a spicy arrabbiata broth with candied onions.

For desserts, Maggioni sticks to the classics such as cannoli. His version features a silky blend of ricotta cream cheese and yuzu parfait, and wrapped with a thin and crispy pastry shell. Book here.

Another way to travel to Japan for the Sakura season is through pastry queen Janice Wong’s Strawberry Sakura High Tea, which you can partake in until April 4. Dig into delicious strawberry creations such as strawberry yuzu opera cake, and Sakura caramel chocolate bonbons.

5. Luke’s Lobster

The next time you bring your family to Luke’s Lobster, try the limited-edition Hot Honey Lobster Roll that is available from April 1 to May 31. Better bring an appetite for the special lobster roll comes with four ounces of Maine lobster claw and knuckle meat. Served between an open-top butter-slathered bun, the chunky and juicy flesh is swathed in chilli-infused Extra Hot Mike’s Hot Honey and sprinkled with chilli powder for a slightly spicy kick.
