1. Sichuan Alley
The unassuming restaurant looks as though it could be like any other underwhelming eatery in the CBD, but chef Pang Kok Keong has quite a reputation for his sumptuous Sichuanese rice noodles. Sichuan Alley’s winning noodles are the culmination of laborious months of research and understudying an artisan in Sichuan. Try the signature dan dan noodle, an original recipe by Pang himself. The noodles are chewy, steeped in a viscous sauce of sesame paste, chilli oil, juicy minced pork and those show-stealing peppercorns. Or for something slightly more unconventional, go for the French red wine Wagyu brisket with truffle foam. The Australian Wagyu brisket is tender and flavourful, while the truffle foam lends the dish its unique taste.
