From exquisite Cantonese fare to hearty Singaporean delights and more, these are the restaurants and cafes to visit at the new hotel
The Fullerton, best known for its two award-winning hotels in Singapore, finally opened its first hotel in Hong Kong this summer. The 425-room hotel also happens to be the first-ever Fullerton resort and is quickly become the new way to holiday without leaving the city.
The hotel, which is in close proximity to Ocean Park and Water World with direct escalator access, boasts jaw-dropping views of the South China Sea as well as an outdoor infinity pool, expansive play zone for kids, and five different dining concepts. We took a look inside the restaurants and cafes at The Fullerton and here's what you need to know.
Jade
Jade, the signature Chinese restaurant of The Fullerton in Singapore, is also one of the main dining venues at the Hong Kong hotel. The restaurant is located on the second floor, offering a spacious dining room and four private dining spaces. The contemporary interior is elegant yet relaxed with grey carpet, green cushions and pops of yellow on the chairs, while a few jade ornaments and Chinese ceramics on the shelves reflect its cuisine.
The menu is curated by executive chef Lai Ching-shing, whom you may recognise from the hotel group's Chinese restaurants Yuè, features classic Cantonese cuisine with dim sum, double-boiled soups and seasonal dishes that make use of locally and regionally sourced ingredients such as Tai Chi Pig, a breed from Hong Kong Heritage Pork. Highlighted items include a flavourful bak kut teh xiao long bao, baked crab shell stuffed with fresh crab meat and onion, and crispy scallop with fresh pear, shrimp paste and Yunnan ham.
