Yes, it's quite a drive to Seletar but one thing's for sure: when you arrive at The Summerhouse, your stress level goes down a notch... several in fact.   Every element of this new food destination embodies the farm-to-fork movement—from its charming interiors to plates that encapsulate nature’s true flavours.  So photogenic it is that plenty of Instagrammers have already made the pilgrimage up north. However, The Summerhouse doesn't just look good, it also aims to do good. We walk you through the estate to show you a slice of  Singapore's greenest food enclave.  

 Jaunt To The Country

A visit to The Summerhouse requires a trip to the airport but there’s no need to fly out to reach this bucolic destination. The 30-minute drive to Seletar Airbase feels like you’re trading the bustling city scene for the serene countryside—something that surely appeals to every urbanite. Upon arrival, you’re greeted by a sprawling 45,000sqft area characterised by verdant surrounds and an overall relaxed vibe.

 History In The Making

The jewel at the centre of it all is the wonderful 2-level conservation bungalow, which was the former abode of the Royal Air Force’s Tech Wing Commander. Dating back to the 1930s, the grounded design—freshened up by vibrant botanical prints and a geometric, mirrored ceiling—immediately puts one at ease. The compound’s old squash courts were also reinvented to house florist Poppy Flora Studio and an on-site roasting facility by Nomad the Gallant.  

Seasonal Inclination 

Leading the kitchen is Chef de Cuisine Florian Ridder, a German chef who at one point thought of foregoing his culinary career to study agriculture. Guided by seasonality and a strong commitment to sustainability, the cooking style and dining experience he proffers is the perfect hybrid of farming and cooking. Expect food with clean flavours, garnished with plenty of edible herbs and flowers as well as inventive culinary twists like grilled rambutan for dessert.

Local Accent 

Chef Ridder’s nature-inspired cuisine relies heavily on the producers that he himself hand-picked. From a local kelong that supplies their seafood to the network of nearby farms in Singapore and Malaysia that provide vegetables, The Summerhouse’s menu aims to be a real reflection of the land. The fruits of their labour, both the growers and the chef, are thoroughly enjoyable, especially the raspberry picked beetroot filled with burrata.

 Wild Abandon

Even if you’re not keen on a 6-course sit down meal, there’s still reason to drive up north. Located at the ground level of The Summerhouse is Wildseed, a casual dining outlet that’s one part-café, other part bar perfect for a laid-back tropical get together. Those with black thumbs can also revel at the chic botanical creations of Poppy Flora Studio, or stroll at the backyard garden done in collaboration with Edible Garden City. All of the herbs and edible flowers used in the restaurant are sourced from these grounds.
