The stylish Admiralty haunt receives a new lease of life this September, courtesy of new operators The Upper House

First opened in October 2014 in Pacific Place, The Continental has had incredible staying power, if not for its modern European cuisine, then surely for the stylish interiors and lush al fresco dining area. Now under the purview of The Upper House, The Continental has just completed an extensive renovation, re-opening to the public with a new chef and revamped menus.

Tasked with updating the look and feel of The Continental, Hong Kong-based Natasha Usher of Nude Design kept the unmistakable undulating ceiling of the restaurant while reupholstering the emerald-green banquettes in more muted and moody shades of teal, rust red, charcoal blue and warm grey.

Gone is the primarily wooden material palette, replaced with leather-bound columns, polished white marble, dark chocolate wood veneers, and prominent brass accents throughout. Artist Miguel Vallinas' canvases bring a zoological element into the space, reflecting the expanded tropical garden terrace outside where diners can immerse themselves within the urban jungle year-round.

Operating on the ethos that "it's not about being clever, it's about being delicious", new executive chef Graham Long is debuting a food programme conceptualised around modern European cuisine crafted using locally-sourced ingredients. An alum of renowned London institutions like Restaurant Gordon Ramsay, Pied à Terre and Elystan Street, Long has ideated menus to take diners from day to night, seven days a week, with business lunches, weekend brunches, bar bites and relaxed dinners.

Expect specialties like pan-fried white bream with green beans and lemon butter salad, heirloom tomatoes served with goat’s curd, and Merguez sausage flatbread with cashew hummus and chilli jam, among others. Josper Grill-finished prime steaks, fresh seafood, pasta dishes and delicate desserts round out the all-encompassing food programme, with special considerations available for vegan and vegetarian diners.

Meanwhile, the redesigned bar will continue to serve classic cocktails like martinis and Bloody Marys, alongside sommelier Arthur Aronov's curation of world wines.
