Chefs Shane Osborn and Michael Smith of Arcane and Cornerstone will be serving two additional dishes inspired by Tom Ford Beauty's Soleil collection

Although The Arcane Collective pop-up at Tatler Dining Kitchen has already sold out, there's still one more chance to savour the cooking of Arcane's chef-owner Shane Osborn and chef de cuisine Michael Smith at our Central restaurant space. For one night only, the two chefs will be cooking a special 7-course menu, of which two exclusive dishes take inspiration from the vibrant fragrances and colours of Tom Ford Beauty's summer collection.

Celebrating the freshest seasonal vegetables, sustainably-caught seafood and the beginning of the Australian truffle season, the original 5-course menu that Osborn and Smith are serving from June 16 to July 10 is an exploration of eco-conscious dining, and for that reason eschews the use of meat—choosing instead to highlight oft-overlooked vegetables as the star of the plate. Group sommelier Didier Yang has curated a selection of wines to pair with each dish, raising the profile of the chosen ingredients in the process.

These are the starter of lightly cured sea bass with mikan, kombu, pink peppercorns and spring onion dashi, paired with a 2019 Jean-Marc Brocard Chablis Sainte Claire to mirror the refreshing opening notes of the Soleil Brulant fragrance; and a dessert of orange blossom fool with rhubarb, strawberries, lavender, and earl grey tea shortbread, paired with a 2009 Chateau Rieussec Sauternes to bring a fragrant finish indicative of the transportive Neroli Portofino eau de parfum.

To round out the experience, guests will also be able to partake in a complimentary fragrance or makeup masterclass with Tom Ford Beauty to create a tailored look (or scent) for the summer ahead. Taking place on the night of Friday, June 24, the Tom Ford Beauty x The Arcane Collective dinner is priced at HK$1,288 per person with an optional wine pairing (HK$588).
