The rooftop restaurant and bar's Sustainable Seafood Menu aims to minimise the burden of seafood demand on the environment

Hong Kong loves seafood. In fact, it is reported that Hong Kong holds a consumption rate of 66.5kg per capita per year. To put that into perspective, that's three times the global average. In order to support a more sustainable seafood market and the Hong Kong Sustainable Seafood Coalition, rooftop restaurant and bar Sunset Grill is now offering a new Sustainable Seafood Menu.  

Chef de cuisine Martín Carrasco has selected an eco-conscious supplier that follows low-impact fishing and aquaculture practices to minimise the burden of seafood demand on the environment, allowing future generations to enjoy all our favourite seafood items. Signature sustainable dishes from Sunset Grill include Icelandic salmon tartare (HK$178), black pollock fish n’ chips (HK$228), and Icelandic golden red fish (HK$298).

Another highlight for the month of June is a salt moss aged tomahawk which has been aged in specialist chambers with seaweed salt bricks.
