Revel in the sweetness of yellow croakers at the award-winning Dynasty this autumn

Indulge in an alluring series of yellow croaker delicacies created by Dynasty's executive chef Suen Kam Sing. Yellow croaker originates from the coastal waters and estuaries of the northwestern Pacific Ocean and is known for its exceptional tenderness and unique umami flavour. Savour poached yellow croaker with rice broth; here, a delicately deboned fish fillet with crispy skin is elevated by the mildly fragrant rice broth and nutty celtuce. 

Then there's the rich taste of steamed yellow croaker with Jinhua ham, chicken fat, huadiao wine and mushrooms. Weighing in at one catty, the whole yellow croaker is steamed to a point that retains its soft texture while absorbing the savoury essence of the many ingredients.
