The simple dish is the perfect combination of mushroom and truffles

One good thing that came about from the coronavirus pandemic, which forced everyone to hunker down months, is that we were able to re-examine our relationship with our own kitchens. After spending much of our time at home, the decision was simple—order food online every day or spice up your weekly meals with home-cooked dishes?

With this new normal, some of our favourite dining spots have been sharing their signature recipes online to encourage this cooking trend. One such restaurant is PS.Cafe, which launched a collection of simple dishes you can easily make at home.

Take, for example, the creamy truffle mushroom spaghetti, cooked using easy-to-find ingredients such as mushrooms, baby spinach, dried spaghetti and PS.Cafe’s own brand of white truffle oil (which you can buy online and at selected outlets).

25ml PS.Cafe white truffle oil
1 white onion, finely chopped
2 cloves of garlic, finely chopped
4 tablespoons extra-virgin olive oil
40g unsalted butter cut into cubes
5g sage leaves whole
5g thyme picked and chopped
200g mixed mushrooms (eg. king oyster, swiss brown or button), cut into bite-sized pieces
140g dried spaghetti (or 300g cooked)
200g heavy cream
Handful of baby spinach
Juice of 1 lemon
60g parmesan, finely grated (about 1/2 cup), plus more for serving
Freshly ground black pepper
Sea salt

The dish, which serves two, only takes 30 minutes to prepare—even if you’re a newbie. Give it a good drizzle of truffle oil and finish it with a squeeze of lemon juice to offset the rich flavours. Click here for the complete instructions.
