“Dear friends, we’re moving to Sydney!” With these six simple words, Rene Redzepi confirmed Noma’s next big relocation project. It’s exciting dining_news for fans Down Under, particularly following the raging success of his restaurant’s Japan pop-up at the Mandarin Oriental Tokyo earlier this year, where Redzepi and his brigade effectively planted themselves in completely foreign soil to use an entirely new set of ingredients and techniques.
Noma Australia will be located in the Anandara building in Sydney’s Barangaroo district, right on the waterside – a setting that is certainly reminiscent of Noma in Copenhagen. According to an interview in Gourmet Traveller Australia, Redzepi revealed that they settled on the location after prowling up and down the country – “from surf clubs and the outback, to Smiths Beach at Margaret River and Sydney’s harbour islands”.
Operating for 10 weeks from January 2016, Noma Australia will have the advantage of working with the Aussie summer season and its offering of beautiful produce.
Redzepi writes: “Since my first trip to Australia several years ago I’ve been wanting to spend more time there— exploring, tasting, and understanding its ingredients. From the tropical fruit in the north, to the native pepper leaf of Tasmania; the pristine fish and shellfish of the very south, and all the new exotic wonders in between.”
Reservations for the restaurant will be taken later on this year, but in the meantime interested diners can register at noma.dk/australia to be among the first to know when the dates will be released.
