French-inspired Japanese fine dining served straight from the chef's counter

Kushiro, a luxurious Japanese restaurant stationed at The Pennisula, presents a new Chef's Recommendation Table Menu on April 21.

Different from previous offerings, this menu, featuring French-inspired Japanese fine dining, is exclusively offered to guests sitting at the dining tables (sushi bar tables not included). Created by executive chef Jason Au, head chef Jan Chung, and senior sushi chef Alex Chung, this menu is designed to spoil guests with the finest gastronomic indulgence.

The menu consists of 10 courses, with highlights including:

  • Foie gras pâté beetroot paper with mint passion fruit jelly: The chefs utilise French foie gras, delicately slow-cooked, complemented with air-dried and uniquely shaped beetroot flakes that bring guests a delightfully crispy mouthfeel.
  • Fish maw katsu with yuzu truffle pepper onsen tamago sauce: Delectable fish maw is coated with Japanese egg yolks and breadcrumbs, with the outer skin lightly fried and beautifully crisped while retaining the tenderness inside.
  • Grilled Kagoshima wagyu striploin with truffle yuzu kosho beef jus: The chefs use charcoal fire to lock the tenderness and juicy flesh of the Kagoshima Wagyu beef. The beef bodes well with pickled cherry blossom leaves, bringing a hint of sweetness and sourness. Together with using extra-concentrated French Arimazan beef juice as the seasoning, the Wagyu beef showcases an exquisite delicacy that can delight guests’ tastebuds.
  • Matsuba crab risotto with Tatami Iwashi: The risotto is made with a seamless blend of Hokkaido Matsuba crab, Japanese rice, and Matsuba crab juice Tonyo broth. It is then seasoned with foam made using Japanese sake and aged vinegar, and finally paired with fried Tatami Iwashi (baby sardine sheets) to create a briny and crispy accent as a finishing touch.

The Chef's Recommendation Table Menu is limited to 4 tables per day, with a minimum of 2 guests per table (5 or more guests will enjoy a complimentary upgrade to a VIP room, with a maximum of 8 guests). Reservations must be made in advance; please indicate your choice of the Chef's Recommendation Table Menu when making a reservation.
