Former Nobu and Silencio chef Sean Mell brings wagyu sandos and fusion sushi rolls to Bistro Concept Group's fifth restaurant in the area

Bistro Concept Group's new izakaya Katsumoto is now open in Sai Ying Pun. The fifth dining outlet and first casual Japanese spot of the restaurant group founded by Christopher Przemyski is named after Moritsugu Katsumoto, a fictional samurai character portrayed by Ken Watanabe in the Tom Cruise film The Last Samurai. Chef Sean Mell, previously at Le Comptoir’s Silencio and the now-closed Nobu at The InterContinental, joins the restaurant as executive chef.

The vibe at Katsumoto is all bold colours and design—and features a samurai painted on the wall. As for the food, Mell has constructed a menu that covers a wide range of Japanese dishes, from tempura and yakitori to ramen and fusion Japanese sushi rolls.

The wagyu sando, one of Mell’s signature dishes at Silencio, gets the Katsumoto—sandwiching breaded Australian M5 wagyu steak between fluffy Hokkaido milk bread slathered with tonkatsu sauce and Kewpie mayonnaise. Vegetarian options include corn tempura served with yuzu kosho and cotija cheese; shiitake mushroom salad with jalapeno vinaigrette; and plant-based ramen made from egg-free noodles topped with Omnipork, served in a vegetarian broth made with dried shiitake mushrooms and kombu. Katsumoto offers a lunch menu on weekdays from 12:00 pm to 4:00 pm and a brunch menu on weekends. All of the restaurant’s a la carte dishes are also available for delivery through Deliveroo
