Café Too and Lobster Bar and Grill will feature Mexican delights from the celebrated chef

Celebrating Mexico’s independence through September, Island Shangri-La, Hong Kong is showcasing chef José Lazcarro’s modern Mexican cuisine in Lobster Bar as well as Café Too from September 8 to 30. Having gained experience working as commis chef for the Alain Ducasse group in Paris, chef Lazcarro worked as guest chef at Tickets Restaurant in Barcelona and consulting chef for the Tragaluz Group in Barcelona.

Café Too will feature a fine array of Mexican dishes in its buffet spread. Notable dishes include:

- Spiced crab and shrimp soup with chillies, epazote and bay leaves
- Mexican pork with nut sauce
- Mole poblano (Chicken breast with Mexican rice)

Chef Lazcarro will also showcase a set menu at Lobster Bar, featuring dishes such as:
- Shrimp Aguachile (Cured shrimp with lime, Serrano chillies and cucumber)
- Green pipian (Free-range chicken breast with green peppers, tomatoes, herbs and seeds)
- Cochinita pibil (Slow-roasted pork leg with citrus juice and annatto seeds)
- Rice pudding with golden raisins, nutmeg and cinnamon

Mexican delights presented by chef José Lazcarro will be available from September 8 to 30.
