The move to Cyberport and Lohas Park brings with it live-fire cooking and an urban farm

Interval Coffee & Wine Bar, which has been serving all-day dining and drinks to the Central area since 2018, will be opening in two new neighbourhoods this February. Operated by Joshua and Caleb Ng of Twins Kitchen, the lifestyle cafe soft-opened its second location earlier this month in Lohas Park, and is due to open a third in Cyberport in late February.

Known for a distinctive blend of artisanal coffee, wine and Chinese-Italian cuisine, Interval will be honing its offering with this expansion, while also branching out into novel forms of the culinary arts, all within some impeccably designed spaces designed by LAAB Architects. The Lohas Park restaurant spans 3,000 square feet, encompassing space for 60 covers, a patio, and a theatre-inspired retail corner selling specialty coffee beans from Coffee Collective and a selection of wines curated by group sommelier Wallace Lo, who previously worked at Haku and Octavium

Meanwhile, the Cyberport location will offer more of a culinary, farm-to-table focus under the eye of chef Steve Chiu, also an alumnus of Octavium and 8½ Otto e Mezzo Bombana. The menu is underpinned by seasonality, sustainability practices and live-fire cooking, with a custom-built Neapolitan wood fire oven and an asador-style grill making possible the addition of sourdough pizzas and grilled meats and vegetables to the restaurant's offerings.

“Live fire cooking has always been a crucial part of all cuisines," says Twins Kitchen's Joshua Ng. "It is the root of civilisation to start, and this primitive form of heat elevates all ingredients with enriched smell, taste and textures.”

An on-site farm created in consultation with Farmacy HK will also provide seasonal micro greens, edible flowers and vegetables to the kitchen, all whilst reducing the operation's carbon footprint and educating diners on the benefits of urban farming.
