Husband-and-wife team Eric and Can Raty are set to present Finnish treats during the two-day event in Central

Despite tightening dining restrictions across town, food pop-ups continue to inspire and surprise food lovers this month. After numerous sold-out weekend events at Sai Ying Pun’s Test Kitchen since April 2020, the Mr. and Mrs. Marshmallow pastry pop-up returns this December. The brand is the effort of Arbor’s Eric Raty and his wife Can, and the duo is set to showcase a wide range of Nordic-style pastry treats. Connecting his Finnish roots with inspiration from French and Japanese cuisines, Eric Raty has been consistently creating new ideas at Arbor, from this year’s Nordic izakaya afternoon tea concept to a recent pop-up with home chef Christopher Ho. For the pastry pop-up, Can, Raty’s wife, designs the menu and takes charge of the line-up of pastry offerings.

On December 12 and 13, Mr. and Mrs. Marshmallow will present a handful of sweet treats. While the fan-favourite of savoury Karelian pie with egg butter is no longer available, the Nordic menu presents new offerings such as Raty’s hazelnut-coffee sandwich, chocolate chip cookie, and gluten-free chocolate nuts cookie. The pastry team has also added a Christmas twist to chocolate cake with a touch of ginger. The sweets are great paired with iced chocolate beverage or wild blueberry juice, both available at the pop-up.

Interval Coffee Bar will also feature a specially curated line-up of Nordic-inspired beverages served on both days. Among the notable selection are Mads No Bake Carrot Cake Imperial Stout, Eric Bordelet Sidre Brut Tenre Cider, and Lone Bee Sparkling Mead, a Nordic honey wine made with fermented clover and manuka honey from New Zealand. Alternatively guests can also indulge in a limited edition coffee, as Interval showcases the Esmeralda Geisha special blend from Copenhagen’s Coffee Collective micro roastery during the two-day pop-up.

As part of a Christmas special, a limited-edition Nordic Christmas hamper is available. Each set features one serving of wild blueberry juice, a ready-to-bake cookie kit, and a jar of homemade berry jam. The Nordic Christmas hamper is priced at HK$270 per set, available at the event.

The Mr. and Mrs. Marshmallow pop-up runs from 2:00 pm to 6:00 pm on December 12 and 12:00 pm to 6:00 pm on December 13; however, based on our previous experience, the limited quantities of homely pastries tend to sell out way before closing time. We suggest heading over for an early afternoon tea with some sweet treats.
