Known for its barbecued pork, Dynasty at Renaissance Harbour View hotel in Wan Chai is a restaurant that stays close to tradition. Following its renovation, the restaurant hasn’t lost its classic touch. With chef Benson Fok at  the helm, the kitchen has been impressing guests with refined takes on Cantonese cooking, through dishes such as fresh crab claw with huadiao wine and steamed rice vermicelli, and more elaborate dishes such as Buddha Jumps Over the Wall.

Billy Lau, Dynasty’s restaurant manager, remarks that following the renovation the venue has seen more guests using the space for entertaining clients and hosting wedding receptions – certainly owing to the luxurious fittings, high ceilings and sweeping harbour views.

The wine cellars too, may be another reason; with over 180 wines on offer, sommelier Andy She comments that there is plenty of choice when he is asked to create flavour pairings for chef Fok’s dishes. For the restaurant’s signature barbecue pork, for example, would go best with an off-dry riesling; whereas a strong red such as Barossa Valley shiraz would stand up to a dish with pungent XO sauce.
