Design Eight Five Two creates an exercise in colour immersion with their latest interior for the Canadian-style sushi chain

A favourite of the Central lunch crowds for their Canadian-style sushi rolls, Chotto Maki is making a jump across the harbour this month with a spiffy new third location in Tsim Sha Tsui.

The design is certainly eye-catching: a tiled interior and modernist-inspired furnishings all awash in a lush shade of crimson evoke touchpoints like 2001: A Space Odyssey and the iconic lobby of Tokyo's Hotel Okura; while sleek fittings like a tatami-inspired light-box ceiling and custom light fixtures resembling Japanese paper fans are a respectable nod to Japan's craft traditions. Meanwhile, the contrasting teal-coloured facade bleeds into an alcove near the entrance where bar seating is available for lone diners.

Intended to resemble the inside of a lacquered chirashi box, it's the fourth collaboration between Design Eight Five Two (DEFT) and Chotto Maki's parent group, Foodtank Hospitality, which also operates Cultivate and speakeasy bar 25:00.

Alongside Chotto Maki's signature hand rolls, the Tsim Sha Tsui eatery will also debut a new cart noodles offering where customers can customise their bowl of noodles from scratch. Pick from ramen, soba or green tea noodles, paired with soup bases like dandan, pork bone broth, and curry. A panoply of toppings is available to jazz up your meal, ranging from teriyaki chicken and beef, to mentaiko fish cake, Hokkaido scallop, baby cuttlefish and more.

On its opening weekend between Friday 12th and Saturday 13th August, Chotto Maki will also be offering the first 100 customers a free California roll on a first come first serve basis. Time to get rolling!
