This year, Chef Lam’s signature lo sang offers a healthy and unique ensemble of premium Kanzaki pumpkin and Korean pear.

With 5 set menus to choose from, Chynna restaurant in Hilton Kuala Lumpur has something for everyone this Chinese New Year.

Its signature lo sang this year features a ‘golden bowl’ of premium Kanzaki pumpkin, which symbolises wealth together with handpicked juicy, crisp and sweet Korean pear symbolising prosperity.

Soft, rich and creamy in texture, the pumpkin is not only a delight to taste buds but it is also extremely good for the complexion. Together, the unique pumpkin and pear combination results in a refreshing lo sang experience where all the ingredients including the sweet ginger and nutty sesame play an important role in tying the dish together.

Those who prefer seafood also have the option of choosing from the Norwegian salmon lo sang made with the chef’s special salted green pea sauce, or the ceasar salad with grated parmesan cheese and Norwegian salmon lo sang, Australian 3 head abalone lo sang and the Japanese sweet prawn and jellyfish lo sang found in the other sets.

Following the pumpkin and Korean pear lo sang in Set Menu 2, diners are treated to a delicious bowl of steaming braised abalone soup with dried scallop and fatt choy (which symbolises luck). Digging into the full-bodied soup, you will notice that its luscious consistency goes well with the juicy abalone – a luxury ingredient often used for special occasions in Chinese culture.

Another highlight in the set is the applewood smoked chicken, which is both succulent and chock-full of intense smoky flavour. A possible family favourite, especially among the younger ones will have to be the fried savoury lily flower and prawns coated with tasty salted egg yolk. The lily flowers are transformed into crispy indulgences, making it hard to believe they are in fact nutritious flowers. Although coated in salted egg yolk, the golden yellow prawns contain a mouth-watering buttery flavour and are just as crispy as the lily flowers.

The steamed tiger grouper chunks served with pickled vegetable, dried shrimp and chilli on the other hand, offers guest a multitude of different textures with a hint of spiciness. In this dish, the mixture of sour, salty and spicy flavours brought upon by the accompanying ingredients elevates the subtle taste of the grouper.

6- Fragrant Fried Rice with Preserved Duck Meat Wrapped in Lot~1 copy.jpg -

The goodness does not end there. Fragrant fried rice with preserved duck meat wrapped in lotus leaf is served to further tantalise taste buds. Similar to some of the other dishes, the fried rice does not hold back when it comes to delivering an abundance of appetising salty savoury flavour.

The set is completed with wild hasma jelly served with dates, apricot and deep-fried Vietnamese crispy rice rolls filled with lemon nian gao. Also unique to the set, the deep fried crispy rice rolls which contain the creamy lemon nian gao are incredibly light and crunchy.
