Celebrate sustainable dining with The Manor at The St. Regis Macao

The Manor is celebrating sustainable dining featuring the finest sustainably sourced ingredients and wines. Executive sous chef Michele Dell’Aquila has raised his game by collaborating with sustainable food producers and utilising seasonal ingredients to design a menu that not only tantalises the taste buds but is also environmentally friendly.

“I believe that chefs can play a vital role in reconnecting people with the environment. It is our duty to promote the products that best reflect a smarter and more sustainable relationship with the planet,” chef Michele explains.

Signature sustainable ingredients include True Born beef, Canary Island aquanaria seabass, Zolfini bean and more.

This sustainable True Born beef originates from Monte do Pasto, in the sunniest plains of Portugal. Open-air breeding, animal welfare, a perfect blend of the best Europeans breeds, cut design, maturation and deep freezing are the secrets to this tasty, tender and nutritious beef presented on the menu.

The chef’s fish of choice, the Canary Island aquanaria seabass, was picked for its outstanding qualities. It breeds in the deep and oxygenated waters of the Atlantic sea with constant temperatures all year round and are fed with whole fishes from a sustainable fishery, monitored and certified by the Marine Trust.

The Celebrate Sustainability six-course dinner is available daily from 6:00PM - 11:00PM and is priced at MOP888+ per person. Elevate your dining experience with a collection of premier biodynamic and sustainable wines curated by sommelier David Duan for MOP1,388+ per person.
