You'll be best to book early if you want to find yourself in the main dining hall, backed with sweeping views of the Marina Bay waterfront. Otherwise, waltz in and you might just find a seat at the bar area. The tapas menu, an abridged version of the main dining menu, gives you plenty of options to fill up on.
Catalunya is one of the few Spanish restaurants here that brings in mojama. The thinly sliced salt-dried tuna glistens with a seductive reddish-brown hue that could be easily mistaken for jamón ibérico - but make no such mistake. This moreish treat is served with a sprinkling of almonds, a fine coupling of flavours from the sea and land. Tolosa's elBulli pedigree shows in the deconstructed tortilla omelette - a cloud-light foam of egg white hiding caramelised onions and an egg yolk in its folds, all served in a martini glass. There are no culinary fireworks here, just well balanced flavours that haven't been put through too much ‘experimentation'. We were also impressed by the escalibada, a smokey heap of vegetables well-paired with foie-gras and smoked eel.
