Split into two concepts, this harbour-facing eatery takes diners from morning to night, and through all of Italy’s gastronomic regions

Rosewood Hong Kong still has some surprises up its sleeve with the imminent opening of Bluhouse, a rustic Italian restaurant facing the Avenue of Stars boardwalk. Taking a sweeping approach towards Italian cuisine, Bluhouse is headed by Neapolitan chef de cuisine Giovanni Galeota, an alum of Macau’s Don Alfonso, who will oversee the two distinct dining concepts that reside within the restaurant.

The first is a laidback ground-floor eatery that hits all of the necessary notes across a number of counters. Guests might amble over to the La Gastronomia deli counter for easy bites like octopus salad, veal tendon and tongue salad, Italian cold cuts, or artisanal Italian cheeses; while La Rosticceria serves heftier mains such as the signature Pollo Allo Spiedo free-range yellow rotisserie chicken, Ariccia-style roasted pork, stewed tripe, and five types of freshly handmade pasta dishes.

Meanwhile, the Pizza Al Taglio station serves eight kinds of Roman-style pizzas by the slice, while a gelato and pastry counter is sure to keep sweet tooths satiated through the summer.

Drinkers will delight in the traditional Italian bar taking inspiration from Milan's famed Camparino in Galleria. On the menu are aperitivos like the Garibaldi, Campari Soda, and Bellini Campari Shakerato, as well as sturdier sippers like the Clay-Pot Negroni. An amaro made in collaboration with Fernet Hunter and Rosewood's bar leads, Simone Rossi and Arkadiusz Rybak, is also a point of pride, featuring an array of locally-foraged botanicals like pomelo leaf, Cuban oregano, citron leaf, and mandarin peel.

Now in its soft opening phase, The Dining Room by Bluhouse is tucked away inside BluHouse and offers an elevated, sustainable take on Italian cuisine that incorporates an extensive wine cellar sampling from the breadth of Italy’s viticultural riches. Some highlights from the menu include Piedmont milk-fed veal tartare, homemade Cappelli Alla Genovese veal pasta, and a 3kg T-bone Scottoma 30-days dry-aged steak with Tuscan anchovy dip. To transport guests to the heyday of the '80s-era Italy, the cocktail menu will feature drinks like the Negroni and Milano Torino made with spirits dating back to that decade.

The interiors of Bluhouse are certainly evocative, designed as they are by London-based interior studio Afroditi. White marble and blue lava stone counters are laden with all manner of delicacies, while large wooden tables invite diners to sit together family-style. The sculptural ceiling and mosaic floors inject Mediterranean elements into the harbour-facing main dining room.

Both of Bluhouse’s concepts will operate along the auspices of a società benefit, a purpose-led business that minimises its ecological footprint through waste management and recycling programmes, while partnerships with NGOs like RUN Hong Kong and The Zubin Foundation will seek to support refugee and ethnic minority communities in the surrounding Tsim Sha Tsui precinct.

The move to open Bluhouse follows hot on the heels of other bankable, crowd-pleasing Italian eateries like JIA Group’s Ramato and Aqua Group’s Cantina, driven by changing consumer habits in the wake of the pandemic for approachable, fuss-free dining experiences that emphasise the act of gathering—with food in a supporting role.
