The former 22 Ships chef gives us an insider’s first look at his latest collaboration with Jia Group’s Yenn Wong

Following on from the opening of Mak Mak earlier this year, Yenn Wong is opening another restaurant that happens to be the second collaboration with a chef after Fish School, her project with David Lai. This time, her partner in crime will be Nathan Green, formerly head chef of 22 Ships for the past two years, and the duo will open Rhoda,  a family-style restaurant in Sai Ying Pun, tentatively set for a May 2016 launch.

Green started his career in food early on. As a child surrounded by hearty family cooking, kitchen work was a big part of his upbringing, as he rolled pastry, flipped omelettes and barbecued meats during childhood playtime.  Having worked in a range of kitchens, from gastropubs in England to acclaimed restaurants by Tom Aikens and Tom Sellers, Green headed to Hong Kong two years ago to head up Jason Atherton’s 22 Ships.

Green found a restaurant space in Sai Ying Pun, on the ground floor of a new building, with simple, hearty dishes that form a daily-changing menu. Here are five things you should know about his new project, according to Green:

The restaurant is named after my grandmother, a great home cook. Rhoda focuses on simple, uncomplicated family meals.
- Ingredients are cooked over wood fire and charcoal and I have fewer fancy electrical equipment in the kitchen.
- Elliot Faber from Yardbird has helped me to curate a collection of liquors – particularly Japanese whiskies and bourbon, my personal drink of choice.
- I love music, and I will put on whatever I enjoy listening to. Old music in particular is great.
- You come to the restaurant to eat the food and talk to people, not with your phone.

Rhoda is opening tentatively in mid-May.
