Chef Zaiyu Hasegawa’s home-cooked dishes offer guests a taste of modern Japanese cuisine with a contemporary twist. A fan of fishing and foraging, he sources his ingredients daily from a carefully selected network of producers. The monaka Japanese rice flour wafer sandwich is a staple and a favourite, acting as a vehicle for seasonal ingredients and flavours, and the DFC—or Den Fried Chicken, served in a cheeky KFC-inspired bucket—enjoys a cult-like following on Instagram. While the food is excellent, what keeps diners coming back is Den’s charm of a “mom and pop” restaurant. The front of house team is led by chef Hasegawa’s wife, Emi, and all guests get a delightful send-off from the couple’s adorable mascot dog, Puchi Jr.
