Darkside

Tsim Sha Tsui, Hong Kong

On the Kowloon waterfront, a jazz bar that proves the “dark side” of the harbour has all the best light

The Rosewood Hong Kong’s sultry bar surrounds you with pale boiserie, green drapes and hourglass chandeliers that spin slowly as the evening unfolds. The cocktails arrive with ceremony: annual concept menus—past themes have included mahjong, yin and yang, and 1920s glamour—turn drinking into a seasonal affair. Bar manager Marco Maiorano, late of London’s Connaught Bar, leads the programme with a focus on forgotten classics mapped by family tree, from the Brown Derby to the Hanky Panky. Live jazz starts at 8pm. The outdoor terrace frames the skyline. And that welcome drink arrives with a square of dark chocolate that regulars dream about.

Tatler Tip

Skip the cocktail list entirely one evening and surrender to the cask programme instead. There are exclusive blends of cognac, Irish whiskey and French fortified wine to explore.
