A beautiful dining experience with flawless service for the best of Cantonese cuisine with a twist

 

The upscale modern interiors of Cuisine Cuisine attract a crowd of wealthy local tycoons to Chinese and Western tourists to IFC. The floor-to-ceiling windows provide a beautiful view of Victoria Harbour and tables are perfectly spaced apart to give diners enough privacy and quietness for conversation. From the beautiful hardwood flooring to the hand-painted charger plates, the details in Cuisine Cuisine’s décor make for a high-end dining experience.

Cuisine Cuisine’s menu is filled with modern seafood dishes with a twist, yet still cooked with classically traditional technique. To start, we had the sautéed crystal king prawn served with a side of oyster sauce and shrimp paste. It was a simple dish that requires a lot of skill. The prawn was fresh and cooked perfectly. The side of oyster sauce paired well with the prawn, however the flavour of the shrimp paste was slightly overpowering. The recommended braised abalone served with mushrooms and vegetables was very flavourful. The vegetables gave the dish more colour and texture, a nice and healthy touch. A must-order is the poached rice and deep fried crackers served with seafood. The flavour of lobster in the seafood broth is strong but not overpowering while the deep-fried rice is fragrant and served on the side. When added to the broth, the deep-fried rice along with the poached rice gives the broth a perfect texture of soft and crunchy. For those with a sweet tooth, the fresh mango and coconut pancakes are not to miss. Each order comes with three bite-size pieces. The slight tartness of the mango is paired perfectly with the sweet coconut. 

Wines are available both by the glass and bottle. The restaurant’s knowledgeable staff can offer recommendations for pairing wine with food and this goes the same for their extensive list of Chinese teas.

The staff worked seamlessly and displayed a genuine interest in ensuring the comfort and enjoyment of all diners. They also accommodated our request for a smaller portion of the poached rice and deep fried crackers served with seafood as usually it is recommended for four to six people. They are also attentive at making sure your teacup is always full and your plate is always clean. 

A meal for two with wine comes to about HK$1,600. Although quite pricey, the extraordinary service and sweeping views are well-worth the money.
