Chiado

Chef Henrique Sá Pessoa has eight restaurants and a Disney+ series, but at The Londoner in Macau, he does something simpler: lets Portuguese ingredients speak for themselves
The room could be in Lisbon. Clean lines, warm wood, light that falls without glare. Nothing screams for attention, not the furniture, art or the view of the Cotai strip beyond the glass. The design whispers modern Portugal, and that whisper is enough. Pessoa’s cooking follows the same logic. Salted cod arrives roasted and paired with chickpea purée that tastes of earth and olive oil. Then the suckling pork appears, and you remember why patience matters. Twenty-four hours in a low oven transforms the meat into something that barely needs teeth. The wine list stays in Portugal. Douro reds with structure, Vinho Verde with acid and Port that demands contemplation. Plus, the staff know every bottle and pour with confidence.
Tatler Tip
The suckling pork spends 24 hours cooking. Give it the attention it deserves, order it first, then build the rest of the meal around it. The roasted cod runs a close second. And ask about the Ports; the cellar holds bottles you will not find elsewhere in Macau.
