There’s something splendidly surreal about the small door that takes you from the Peninsula’s palatial corridors into a windowless, low-ceilinged Swiss lodge, where the smell of melted cheese immediately hits you. Chesa’s commitment to its theme is impressive, down to the alphorn music and the candlelit arc of the wood-panelled roof. Unusually, the dinner set menu doesn’t feature Chesa’s signature dishes, although the Swiss wine pairing is surely unique in Hong Kong. The Gruyere and cream soup is a highlight, though, and hints at the dangerously delicious things the chefs can do with dairy.
