What arrives at the table feels both familiar and quietly revelatory. Techniques remain classical, but the outcomes are unusually vivid, with flavours that are cleaner, textures more precise, each dish stripped of anything that might obscure the ingredient itself. The Chairman continues to set a benchmark few kitchens in the city come close to matching. Service is warm, efficient and without fuss, while the atmosphere remains resolutely Hong Kong: lively, local and full of regulars who return often.
