Set along the coastal bends of Siolim, Boilermaker reimagines the classic dive bar with unpretentious Goan charm

 

Co-founded by craft beer pioneer Nakul Bhonsle and acclaimed mixologist Pankaj Balachandran, Boilermaker pairs the grungy vibe of steel and industrial lighting with the warmth of a back garden house party. The menu nods to the timeless beer-and-a-shot ritual, where fresh draughts and Goan smoked-malt Scotch ales are poured alongside sharp, composed cocktails like the gin-based Why Did The Onion Blush? and the Apple Of My Eye whiskey highball made with Bajra soda. The kitchen keeps pace with elevated regional bar bites, including a lal bhaji melt with cheddar, mozzarella and amaranth leaves, and pickled cucumbers in balchão, a Goan spicy vinegar sauce.

Don’t skip the smoked-malt Scotch ale, it’s one of Goa’s first artisanal drafts.
