Under the confident direction of executive chef Félix Noguera, the menu showcases traditional flavours executed with contemporary finesse. Highlights include the ensaladilla de patata y gambas—a creamy yet refreshing prawn and potato salad—and the steak tartar con caviar, served on brioche toast as a luxe, bite-sized interpretation of the classic. Each morsel balances the richness of beef with a briny burst of caviar. The selección de Ibéricos impresses with its array of premium cured meats, particularly the deeply nuanced 60-month jamón, while the chicken and seafood paella achieves a satisfying harmony between land and sea. The standout main dish is the charcoal-grilled Australian Shimo wagyu striploin. It features perfectly rendered fat and is served alongside golden potatoes crisped to a delicate crust with cloud-soft centres.
