Bar Trench
A cosy neighbourhood bar with a seamless blend of Japanese and Brazilian hospitality
Established in 2010, Bar Trench focuses on medicinal beverages such as herbal spirits, with a particular expertise in absinthe. Chief bartender Rogerio Igarashi Vaz, who co-owns the bar with Takuya Itoh, is a third-generation Japanese-Brazilian born in São Paolo who came to Japan 30 years ago, and the bar marries Japanese omotenashi culture with cheerful Brazilian hospitality. It’s located in a former pharmacy, and Igarashi Vaz welcomes guests wearing the attire of a chemist. Bar Trench has the warm atmosphere of a neighbourhood bar, despite being located in buzzy Ebisu. Its second floor is a library, and sometimes hosts musical performances.
