French cuisine has always faced tough culinary crowd in the Philippines. But we bet your bottom dollar that this rare gem is staying put. Taking on the challenge with Cuenca are Joël Robuchon- trained chef de cuisine, Miko Calo, Alain Borgers (the former GM of Makati Shangri-La), and branding whiz, RJ Galang. Instead of formal-course dining, here, one can expect a well thought out progression of ingredient- driven rather than concept-driven dishes curated and calibrated by Calo, allowing diners to create a degustation for themselves. Further augmenting the delightful savoire-faire is a tightly curated wine list. Building on the memorable Metronome experience are the bright and crisp interiors brilliantly executed by Noel Bernardo.
