Amid a sea of hotels is an unlikely hub for experimental cocktails, founded by a competition-savvy team of bartenders and art aficionados. Art is the overarching theme here, and the cocktails regularly pay tribute to artistic touchpoints throughout history. Highlights include Lady Grey, made with tea, sherry wine, lemon and whey; Ukiyo-e, a reference to the Japanese art style created in the 15th century, which uses rum, sake, umeshu and yuzu; and Renaissance Garden, a savoury medley of vodka, tomato, vermouth, olives, garlic and basil.
