Sushi Ashino remains a revered jukusei, or aged sushi, temple. Now located on Club Street, the restaurant’s understated entrance leads into a calm, softly lit space that feels worlds away from the city’s bustle. The interior is minimalist yet warm—a harmony of natural wood and stone accents. The hinoki sushi counter is the star—smooth, fragrant and meticulously polished. Guests may choose from a variety of omakase options—the neta varies with the seasons—complemented by a diverse sake and wine programme. Service is thoughtful and attentive; Ashino shares just enough about his ageing process—how each fish is rested, refined and brought to peak flavour—to deepen appreciation without breaking the flow. Combined with his superb shari, each nigiri is remarkably silky, nuanced and rich in umami.
