The reason why Ah Leng Char Kuey Teow is a favourite is simple: it's the wok hei. The restaurant uses quality produce, including great noodles, and the seasoning is done very well, which makes it taste even better. Even though not a lot of oil is used on the well-seasoned wok, the char kuey teow is cooked perfectly and each bite tastes so good.
