Ad Astra

"Ad Astra," created by young New York chef Kevin Rose, is inspired by the Latin phrase "Per Aspera, Ad Astra," meaning "after going through all difficulties, we will eventually reach the stars," expressing his passion and determination for exploration.

 

Chef Kevin Rose was born in Pennsylvania and knew he wanted to become a chef by the age of 12. With the encouragement of his mother, he began working in restaurants and, through relentless dedication, eventually earned a position at Restaurant Daniel in New York City. He later joined Atera as sous chef, where he helped merge modern French techniques with Nordic sensibilities. During his time at Atera, Kevin frequently visited Taiwan alongside Danish chef Ronny Emborg, developing a lasting connection with Taipei.

Rose chose Taipei over other Asian cities for one simple reason—the freshness and diversity of Taiwanese ingredients. Deeply passionate about local produce, he often visits traditional markets in search of seasonal ingredients, which he seamlessly incorporates into his creations.

His culinary style reflects an international perspective grounded in Taiwanese and Japanese influences. Through techniques such as aging and curing, Rose crafts dishes that are refined, focused, and vibrant. He values simplicity with depth, ensuring each dish tells its own story and achieves a delicate sense of balance.
